Salisbury University is seeking qualified applicants for the position of Assistant Sous Chef in the University Dining Services department.
Primary Job Duties: Under general supervision, supervises cooks, food service aides and student workers engaged in one or more components of a food service operation such as preparing and serving food, safety and sanitation, coordination of meal schedules, catering and services. Ensures quality standards are maintained. Responsible for controlling food and labor cost during assigned shift. Assists with inventory as necessary. Training new and existing cooks, food service aides and student workers, assigning and reviewing work tasks, evaluating performance. Receiving and inspecting supplies, record keeping to include attendance, disciplinary actions, applications and interviews.
Minimum Qualifications: High School Diploma/GED and five years progressively responsible experience in commercial or institutional food service, two years of which must have been in a lead or supervisory capacity.
Working knowledge of Excel and word processing. Thorough knowledge and understanding of the principles and methods in large scale food preparation and service. Thorough knowledge of and skill in the application of procedures and standards of quality and quantity food selection, food preservation, food preparation, meal service, and portion control. Thorough knowledge of and skill in the use of food service equipment and materials. General knowledge of federal, state, and local health and sanitation regulations applicable to food service activities. Skill in providing guidance to food service personnel. Ability to organize and coordinate the work of food service operations and to control workload to assure quality service; to supervise and instruct food service personnel; to prepare and maintain records and reports; to communicate effectively both orally and in writing; to work in irritating environments and adverse temperature conditions; to lift up to 50 lbs, transport and stock food service supplies, materials and equipment.
This position is expected to report for work during emergency situations such as extreme weather conditions when the University may be closed.
Preferred Qualifications: Serve Safe Certification or TIPS preferred.
This is a full-time, non-exempt, State position with a full benefits package. Starting salary is $38,204.00 annually, which is approximately $18.32 per hour.
