 Nutrition Education
University DietitianHave questions about nutrition? Do you want to gain or lose weight? Do you need information about a modified diet for diabetes, high cholesterol or reflux? Maybe your diet just needs a little fine tuning or you want to learn more about healthy eating?

Nutrition counseling services are available to all SU students and employees. Just call 410-548-9112 to make an appointment to talk with the University Dietitian, Kate Cerulli, MS, RD, LD. There is no charge for these services and all counseling is confidential. Counseling hours are from 8:30 a.m.-4 p.m. 

 


Bon Coeur Dining
Bon Coeur LogoBon Coeur ("The Good Heart") dining program is designed to make healthy, lower fat eating easier and more fun. Food items which meet our requirements for fat and cholesterol are identified with a Bon Coeur logo. Bon Coeur takes a realistic approach to healthy eating with most dishes providing 35% or less of total calories from fat.

The Bistro is home to the Bon Coeur dining program. Here you will find heart healthy, low fat cooking with a gourmet touch. Check the Cafe Express for the Bon Coeur selections (they're the ones marked with a heart).

Bon Coeur is and always will be a work in progress. We will be trying new foods and adding new items to the menu. If you have a Bon Coeur type of recipe that you would like to share with us or if you have questions concerning Bon Coeur dining at SU, please call the University Dietitian, Kate Cerulli, at 410-548-9112.

Vegetarian & Vegan Dining
The vegan/vegetarian population at SU is growing. In response to this growth, UDS is increasing the dining options available to the vegans and vegetarians we serve. Let's take a tour of The Commons Marketplace from a vegan/vegetarian perspective.

Fiesta Express
Includes options like vegan chili, meatless soy crumbles and refried beans.

Lotsa Pasta
Includes among its daily menu items a vegan marinara sauce.

Wok 'n' Roll
A very popular kiosk with vegetarian students. Here you can have a stir-fry cooked to order while you wait. Wok 'n' Roll offers a wide selection of fresh vegetables along with tofu as a protein source.

S.S. Grillers
Looking for a burger? (Vegetarian of course!) Head over to S.S. Grillers where Vegan Boca Burgers, Garden Burgers & Smart Dogs are cooked to order.

Veggie Patch
Available every night at the Kozy Kitchen Deli, the Veggie Patch includes three vegetables (corn and steamed broccoli are daily standards), along with a Bon Coeur entree or side dish.

The Bistro
The Bistro is home to Bon Coeur dining which makes healthy, lower fat eating easier and more fun. Bon Coeur, while not a vegetarian program, places a special emphasis on lower fat protein sources like beans and tofu. Vegan dishes like Red Beans & Rice, Penne with Hot & Spicy Tofu and Tofu Spinach Lasagna are features of the Bon Coeur menu.

Also Look For...
Fresh fruit at the fruit stand and crisp veggies at the salad bar. Thirsty? Soy milk is always available in The Marketplace along with fruit juice.

We try to make it as easy as possible for our vegan and vegetarian students to plan healthy meals. The monthly UDS Cafe Express includes the month's menus with all vegan and vegetarian items identified.

VEGAN CANDLELIGHT DINNER

UDS plans a Vegan Candlelight Dinner each semester with a menu that consists of all vegan recipes. The Vegan Candlelight Dinner is an elegant gourmet dinner available to meal plan holders at no cost (the dinner counts as a meal swipe) and to guests for the cash door price.
